Next week the cooking will stop!

buuuuuut until then…

So S. Geek is away next week so all the delicious cooking and baking will have to stop if I’m going to be able to fit into the pants I’m wearing right now by the time he gets back!  I’m a total weakling when he goes away, it’s terrible and shameful!  When he’s here, I can confidently walk through the chip aisle at the grocery store and not even look at the party mix or the corn chips.  But when he is gone, I have been known to lick the salt off of saltines.  I told you I am weak!  So for the week he was here I have been really cooking and baking a lot but haven’t indulged too much because S. Geek is here to protect me from myself.  So next week I’m only buying bland yucky things to bring into my house so Cake will be happy but I will be left with only memories about gratifying meals such as this one!

I actually made these a few weeks ago and am only now getting around to blogging about it, but it’s too good to forget about!

Start out by making your favourite pizza crust.  I like the amazing whole wheat pizza crust that you can find on http://www.allrecipes.com, it makes 2 perfect crusts every time without fail.  Once you’ve gone through your second rise, split the dough into 6 different balls.

Then roll out to the thickness of regular pizza crust, I never usually measure but if I had to guess about 1/4 inch thick.

Fill it with enough topping that you can barely close it, then fill it some more because it’ll really reduce during the bake time.

Next fold it over, then pinch all the edges shut.  Make sure you get a really nice seal so that your chicken filling doesn’t leak.

Brush the top with a bit of oil, then prep your pans with cooking spray and I usually put on some cornmeal to keep the dough from sticking.  They won’t get much bigger so you can pack them pretty close, but not touching on the pan.

Bake your calzones for whatever the cooking instructions are for your pizza crust.  Mine was to cook for 20 minutes at 425 degrees.  Here’s what they turned into:

They were super delicious!  They were a biiiit on the spicy side, so the kids pretty much just ate the pizza crust but S. Geek said they were perfect for him.

Here’s the mixture I made up, but be forewarned…it’s spicy!

I roasted 1 whole chicken and then took all the meat off.

Add in 1 chopped yellow pepper

Roughly 8 cups of baby spinach

1/2 c. fat free ranch dressing

1/2 c. buffalo sauce (next time 1/3 c.)

1 c. shredded cheese

4 chopped green onions (though next time I think red onion would be better)

Mix it all up and stuff away!

    I make these – with that same w/w pizza dough recipe of course! – for the boys school lunches. I make them smaller though, and load them up with pizza sauce and veggies, or whatever filling. They freeze great wrapped in foil. They make their lunches at night, and by lunch time the next day they’re thawed. It’s a nice alternative to soup or sandwiches.

    I just flipped through some of your earlier post and man can you cook or what? Not me, but I sure do love looking at pictures of it! I’m following.

    Oh my gosh I cannot believe you had over 500 kids for Halloween!!!!! I think the cold MN weather might keep our numbers down.. I remember trick or treating in 3 feet of snow when I was a kid! lol This meal looks delicious by the way! Thanks so much for stopping by 🙂 I am your newest follower!
